About Jimmy Prosciutto

Prosciutto wrapped asparagus, sushi styleOkay I’m only half Italian, and you have to go to my grandfather to be born there.  I am into food, and have been blessed with a metabolism that lets me eat a lot – and I do. 

I have also worked the last few years at my dream job, Santa Maria Foods.  We produce prosciutto, dry cured salami and mortadella; of course I think we do it very well.  The dream part, I get to discover, learn and share Italian deli meats almost every week end, and usually a few times during the week.

Whenever I serve prosciutto, people have a million questions.  I will attempt to share what I have learned, with my many failures; and the new things I am learning – prosciutto and beyond.
